Fried smashed potatoes with garlic and lemon

Irresistible crispy smashed potatoes with zesty garlic and lemon flavors.
Ingredients:
  • 1kg chat potatoes, scrubbed
  • 80ml olive oil
  • 3 garlic cloves, halved
  • Finely grated zest of 2 lemons
  • 60ml lemon juice
  • 40.00 ml finely chopped flat-leaf parsley
  • 20.00 ml finely chopped lemon thyme
Instructions:
  • Prepare a baking tray by greasing it. Boil potatoes in a large saucepan of cold salted water until tender, about 6-8 minutes. Drain the potatoes, then let them sit in the pan for 1 minute to dry. Transfer the potatoes to the greased baking tray and gently press them down with a fork.
  • Heat 2 tablespoons of oil (or rendered pancetta fat from chicken recipe with additional oil to make 2 tablespoons) in a frypan over medium-high heat. Infuse the oil with garlic for 15 seconds for added flavor, then remove and discard the garlic. Cook the potatoes for 3 minutes on each side until they are golden and crispy.
  • Mix together the zest, juice, and herbs with the remaining 2 tablespoons of oil. Add seasoning, then gently coat the potatoes with the mixture. Serve alongside the chicken.
