Crispy smashed potatoes with salty bacon and pungent blue cheese.
Ingredients:
  • 2 pounds baby red potatoes
  • salt to taste
  • 10 slices bacon
  • 0.75 cup crumbled blue cheese
  • 1 bunch green onions, sliced
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer on medium-low heat until tender, about 10 minutes. Drain the potatoes.
  • In a large skillet over medium-high heat, cook bacon until evenly browned, turning occasionally, for about 10 minutes. Place cooked bacon on paper towels to drain and crumble once it has cooled. Keep the bacon grease for later use.
  • Prepare the baking sheet by lightly greasing it with a touch of the savory bacon grease. Arrange the potatoes on the sheet and gently crush them using the base of a glass. Drizzle a little more bacon grease over the potatoes for added flavor. Give the potatoes another round of smashing and brushing. Finish off by lightly sprinkling salt over the potatoes to enhance their taste.
  • Roast potatoes in a preheated oven until beautifully crispy for about 15 minutes. Sprinkle with blue cheese and crumbled bacon. Continue baking until the cheese is deliciously melted, approximately 5 more minutes.
  • Garnish with freshly chopped green onions before serving.
