Crispy Smashed Potatoes

Easy smashed potatoes: Smash small tender potatoes, season, bake till golden & crispy outside.
Ingredients:
  • 1.5 pounds small yellow-fleshed potatoes
  • 0.25 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon butter at room temperature
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon dried sage
  • 0.5 teaspoon ground thyme
  • 0.5 teaspoon dried savory
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Collect all of your ingredients.
  • In a saucepan, submerge potatoes in water. Boil until tender, but not mushy, for 15-20 minutes. Drain in a colander, then transfer to a baking sheet lined with a dish towel to cool and dry slightly for about 10 minutes.
  • Combine olive oil, balsamic vinegar, butter, garlic, rosemary, sage, thyme, savory, salt, and pepper in a bowl, stirring until well blended while the potatoes cool.
  • Preheat the oven to a piping hot 450 degrees F (230 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Spread out the cooled potatoes on the baking sheet. Gently crush them using a potato masher or the heel of your hand.
  • Drizzle the oil-herb mixture over each smashed potato.
  • Bake potatoes in the oven until golden and crispy, approximately 25 minutes. Allow them to cool slightly before serving.
