Crispy spiced veggie fritters from India, deep-fried to golden perfection and served with delicious dipping sauces.
Ingredients:
  • 1 cup chickpea flour
  • 2 cloves garlic, crushed
  • 1 teaspoon salt
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon garam masala
  • 0.75 cup water
  • 1 quart oil for deep frying
  • 0.5 head cauliflower florets
  • 2 medium onions, sliced into rings
Instructions:
  • Combine chickpea flour, garlic, salt, coriander, turmeric, chili powder, and garam masala in a medium bowl. Create a well in the center and slowly pour in water, stirring to create a thick, smooth batter.
  • Preheat oil in a large heavy saucepan over medium-high heat to 375 degrees F (190 degrees C).
  • Coat cauliflower florets and onion rings in batter while oil is heating.
  • Fry the battered vegetables in small batches in hot oil until they turn a beautiful golden brown, which should take about 4 to 5 minutes. Remember to drain them on paper towels before serving.
