Vegetable pakora salad with fruit chutney yoghurt

Make a delicious crispy vegetable salad using ingredients you already have at home.
Ingredients:
  • 2.40 gm sea salt flakes
  • 225g (1 1/2 cups) self-raising flour
  • 7.50 gm ground cumin
  • 3 tsp ground coriander
  • 1 1/2 teapoons turmeric
  • Pinch of cayenne or chilli powder
  • Vegetable oil or peanut oil, to shallow fry
  • 260g (1 cup) natural yoghurt
  • 90g (1/4 cup) fruit chutney
  • 1500.00 ml thinly sliced mixed vegetables
  • Mixed salad leaves, to serve
  • Lime wedges or lemon wedges, to serve
Instructions:
  • Preheat your oven to 160C/140C fan forced. In a bowl, toss sliced mixed vegetables with salt and let sit for 5 minutes to soften.
  • Mix the yogurt and chutney together in a bowl.
  • Combine the flour and ground spices in a bowl. Slowly whisk in 310ml (1 1/4 cups) of cold water until a thick batter forms. Gently mix with the vegetable mixture until well coated.
  • Heat oil in a deep heavy-based frying pan until it reaches a depth of 2cm, over medium-high heat. Test the oil by adding a cube of bread - it should turn light golden in 30 seconds. Spoon 2 tablespoons of the vegetable mixture into the oil to make 3 fritters. Cook until golden on the base for about 2 minutes, then flip and cook for another 1-2 minutes. Drain on a paper towel-lined plate. Repeat with the remaining mixture in 4 more batches. Keep the vegetable pakoras warm in the oven on a baking tray.
  • Place a generous portion of salad leaves and vegetable pakora on each serving plate. Drizzle with the delicious yoghurt dressing and garnish with lime or lemon wedges. Enjoy your beautifully plated meal!
