Indulge in cream cheese and apricot croissant for a luxurious breakfast treat.
Ingredients:
  • 112.50 gm sugar
  • 250.00 gm water
  • 1 cinnamon stick
  • 2 strips lemon rind
  • 400g apricots (peaches or plums), stoned and quartered
  • 125g Spreadable Cream Cheese
  • 18.00 gm icing sugar, sifted
  • 2 tsp finely grated lemon rind, extra
  • 4 croissants, warmed and split
Instructions:
  • In a saucepan, mix sugar, water, cinnamon, and lemon rind. Cook while stirring until sugar dissolves. Bring to a boil, then simmer gently for 10 minutes. Add apricots to the syrup and poach for 10-12 minutes until soft. Remove apricots, then boil the syrup until reduced by half. Pour the syrup over the apricots and let them cool.
  • In a bowl, combine Philadelphia, icing sugar, and extra lemon rind until smooth. Spread this creamy mixture over croissants, then transfer them to serving plates. Top with apricots and a drizzle of syrup. Serve right away for a delightful treat.
