Oven-baked brunch classic with ham and Gruyere cheese.
Ingredients:
  • 6 cups cubes (1 inch) French bread
  • 2 cups cubed cooked ham
  • 2 cups shredded Gruyère cheese (8 oz)
  • 1/3 cup butter or margarine
  • 3/4 cup chopped red onion
  • 1 clove garlic, finely chopped
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground red pepper (cayenne)
  • 2 cups milk
  • 1 1/2 teaspoons chopped fresh thyme leaves
  • 1 teaspoon ground mustard
  • 8 eggs
  • Chopped fresh chives, if desired
Instructions:
  • Prepare a 13x9-inch (3-quart) glass baking dish by spraying it with cooking spray. Spread the bread cubes in the dish, then top with ham and 1 cup of cheese.
  • In a 2-quart saucepan, melt butter over medium heat. Sauté onion and garlic until tender, about 5 minutes. Add flour, salt, black pepper, and red pepper, stirring until smooth and bubbly. Slowly pour in milk, stirring constantly until mixture thickens. Remove from heat and stir in thyme and mustard.
  • In a medium bowl, whisk eggs until well beaten. Slowly mix a small amount of the hot mixture into the eggs, then incorporate the egg mixture back into the hot mixture. Cook over low heat for about 1 minute, stirring constantly, until thickened. Pour this delicious mixture over the ham and cheese in a baking dish. Sprinkle with the remaining 1 cup of cheese. Cover with foil and let it chill in the refrigerator for at least 4 hours but no longer than 24 hours.
  • Preheat the oven to 350°F. Bake the uncovered dish for 35 to 40 minutes until puffed and a knife inserted in the center comes out clean. Allow it to rest for 5 minutes before slicing into squares. Finish by topping with fresh chives for garnish.
