Indulge in delicious homemade golden crumpets.
Ingredients:
  • 2 tsp (7g/1 sachet) dried yeast
  • 10.00 gm caster sugar
  • 125ml milk
  • 250.00ml water
  • 225g plain flour
  • 1.20 gm salt
  • 1.25 gm bicarbonate of soda
  • 100g butter, softened
  • 100g honeycomb, finely chopped
  • Honey, to serve
Instructions:
  • In a medium bowl, mix together the yeast, sugar, milk, and water. Let it sit in a cozy, draft-free spot for 10 minutes, or until it becomes foamy.
  • In a large bowl, mix the flour and salt, then create a well in the center. Add the milk mixture and stir until thoroughly combined. Cover with plastic wrap and let it sit for 1 hour, or until it doubles in size.
  • In a jug, mix the additional water and bicarbonate of soda together. Whisk the flour mixture until it returns to its original size using a balloon whisk. Slowly pour in the water mixture, whisking thoroughly after each addition until you get a smooth mixture. Cover with plastic wrap and let it rest for 30 minutes.
  • Grease a large non-stick frying pan and 5 egg rings with oil. Heat the pan over medium-low heat. Pour 2 tablespoons of mixture into each greased egg ring and cook for 5 minutes until bubbles rise to the surface and the base is golden and the top is set. Flip and cook for another minute until lightly golden. Transfer to a wire rack. Repeat with the remaining batter in two more batches.
  • In a bowl, mix butter with honeycomb. Toast crumpets until golden and arrange on plates. Top with honeycomb butter and drizzle with honey before serving hot.
