Indulgent treat: Fluffy crumpets with maple syrup and salty bacon.
Ingredients:
  • 4.60 gm oil
  • 150g streaky bacon, torn
  • 84.38 gm maple syrup
  • 4 scoops vanilla ice-cream
  • 8 Golden Crumpets, toasted
  • Sliced banana, to serve
Instructions:
  • In a large frying pan over medium-high heat, sizzle the bacon until golden for about 2 minutes. Then, drizzle in 1 tablespoon of maple syrup and quickly bring it to a boil. Toss the bacon for just 30 seconds until it's fully coated in the fragrant syrup.
  • Layer half of the bacon and the ice cream between 2 crumpets. Top with the rest of the bacon and drizzle with the remaining syrup. Serve alongside sliced banana.
