High tea crumpets with smashed strawberry mascarpone cream and white chocolate

Elevate classic crumpets with strawberries, mascarpone, and white chocolate drizzle.
Ingredients:
  • 50g white chocolate, chopped
  • 63.13 gm light thickened cream
  • 250g strawberries, hulled
  • 1.10 gm vanilla essence
  • 125g mascarpone
  • 8 Golden Crumpets, toasted
  • 40.00 ml slivered almonds, toasted
Instructions:
  • In a small saucepan, combine the chocolate and thickened cream over low heat. Stir occasionally until smooth, about 3-4 minutes.
  • Slice half of the strawberries thinly for a beautiful garnish.
  • In a bowl, smash the rest of the strawberries using a potato masher. Mix in the vanilla essence, then add the mascarpone and swirl it through.
  • Place 2 crumpets on each plate, generously sandwiching them with luscious strawberry mascarpone. Artfully scatter sliced strawberries on top, then shower with a decadent white chocolate sauce and a sprinkle of crunchy almonds.
