Summer BBQ twist with beach vibes. Pair with fried yuca and mojito for a tropical touch.
Ingredients:
  • 1 pound ground beef
  • 0.5 cup unsweetened shredded dried coconut
  • 0.25 cup chopped fresh cilantro
  • 1 egg
  • 2 tablespoons lime juice
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cream of coconut
  • 1 teaspoon soy sauce
  • 1.5 teaspoons salt
  • 1 cup mayonnaise
  • 2 teaspoons cream of coconut
  • 1 tablespoon chopped fresh cilantro
  • 1 cup unsweetened shredded dried coconut
  • 4 hamburger buns, split
Instructions:
  • Mix together the beef, 1/2 cup coconut, cilantro, egg, lime juice, Worcestershire sauce, 1 tablespoon cream of coconut, soy sauce, and 1 1/2 teaspoons salt in a bowl until fully combined. Shape into 4 patties and set aside.
  • Combine mayonnaise, 2 teaspoons of cream of coconut, and 1 tablespoon of cilantro; let sit. Heat vegetable oil in a skillet over medium heat, add 1 cup of coconut and 1/2 teaspoon salt. Cook until golden brown. Drain on paper towels and set aside.
  • Prepare the outdoor grill by preheating it to medium-high heat and lightly oiling the grate.
  • Grill the burgers to your liking, around 4 minutes per side for medium-well. Spread cilantro mayonnaise on both sides of the buns. Top the bottom buns with the cooked burgers, sprinkle with toasted coconut, and enjoy!
