Crunchy garlic chicken

Elevate your protein with a crispy, golden crust effortlessly.
Ingredients:
  • 1 clove of garlic
  • 1 lemon
  • 6 saltine crackers
  • 2 tablespoons unsalted butter
  • 4 sprigs of fresh Italian parsley
  • 2 heaped tablespoons all-purpose flour
  • 1 large free-range egg
  • 2 skinless free-range chicken breast fillets
Instructions:
  • Start by peeling the garlic and zesting the lemon. Combine the crackers, butter, garlic, parsley sprigs, lemon zest, sea salt, and black pepper in a food processor, and blend until fine. Transfer the mixture to a plate. Spread the flour on another plate. Beat the egg in a small bowl. Score the underside of the chicken breasts lightly. Cover each breast with clingfilm and flatten a bit by pounding gently. Coat the chicken in flour, then egg, and finally in the flavored crumbs, pressing them onto the meat. Bake at 240°C/475ºF/gas 9 for 15 minutes or fry in olive oil for 4-5 minutes per side until golden and cooked through. Serve the chicken whole or sliced with a squeeze of lemon juice and a sprinkle of salt. Enjoy with salad or vegetables on the side.
