Crunchy noodle salad

Delicious side salad featuring crisp lettuce and crispy fried noodles.
Ingredients:
  • 20.00 gm caster sugar
  • 10.60 gm soy sauce
  • 1/2 tsp sesame oil
  • 57.50 gm rice bran oil
  • 1 small iceberg lettuce, shredded
  • 6 green onions, cut into 2cm lengths
  • 1 handful bean sprouts
  • 82.50 ml slivered almonds, toasted
  • 125.00 ml roughly chopped fresh coriander leaves
  • 100g packet original fried noodles
Instructions:
  • In a small saucepan, combine vinegar, sugar, soy sauce, and oils over low heat, stirring continuously for 2 to 3 minutes until the sugar dissolves. Take off the heat and let it cool.
  • Combine lettuce, onion, bean sprouts, almonds, and coriander in a large bowl. Drizzle with dressing, toss well. Add noodles, toss again. Serve promptly.
