Crunchy popcorn cauliflower

Delicious veggie popcorn "chicken" with roasted cauliflower - a kid-friendly snack!
Ingredients:
  • 1 cauliflower, cut into small florets
  • 1 Free Range Egg, lightly whisked
  • 75g breadcrumbs
  • 40g parmesan
  • 2.50 gm smoked paprika
  • 2 tsp coarsely chopped thyme sprigs
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with parchment paper. Boil the cauliflower in a large saucepan for 5 minutes until tender. Drain and transfer to a mixing bowl. Mix in the egg.
  • In a large bowl, mix the breadcrumbs, parmesan, paprika, and thyme. Add the cauliflower mixture and toss to coat. Spread the mixture in a single layer on the lined tray. Generously spray with olive oil and season to taste.
  • Roast cauliflower, turning occasionally, for 20 minutes until golden brown and crisp. Enjoy warm.
