Transform plain meatloaf into a family favorite with a crispy topping.
Ingredients:
  • 200g fresh breadcrumbs
  • 150g diced bacon
  • 125.00 ml grated cheddar
  • 9.20 gm oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 carrot, coarsely grated
  • 500g premium beef mince
  • 500g sausage mince
  • 41.60 gm tomato sauce
  • 20.00 ml chopped oregano
  • 1 egg, lightly beaten
  • Salt & freshly ground pepper
Instructions:
  • Preheat the oven to 180°C. Line the loaf tin with baking paper, leaving the sides to overhang. In a small bowl, mix together 1/2 cup breadcrumbs, 1/4 cup bacon, and 1/4 cup cheese for the topping.
  • In a small frying pan, heat oil and cook onion, garlic, and carrot until softened for about 5 minutes. Allow to cool slightly before proceeding.
  • Combine minced meat, tomato sauce, oregano, egg, remaining breadcrumbs, and bacon in a large bowl. Stir in the cooled onion mixture, season generously with salt and pepper, and mix until evenly combined.
  • Spread the mixture into the tin, keeping the top slightly rough. Sprinkle the topping over the mixture and place the tin in a baking dish. Bake for 45 minutes until the top is crisp and golden. Remove any excess juices. Lift the meatloaf from the tin onto a cutting board using the paper, then slice and serve with steamed vegetables.
