Atkins cheeseburger quiche: Ground beef, bacon, egg, mayo, Cheddar - quick, delicious weeknight meal.
Ingredients:
  • 3 thick slices bacon, diced
  • 0.5 small yellow onion, diced
  • 1.5 pounds lean ground beef
  • 1 tablespoon garlic salt
  • 1 tablespoon onion powder
  • 1 cup shredded Cheddar cheese, divided
  • 6 eggs
  • 0.5 cup heavy whipping cream
Instructions:
  • Heat your oven to 350°F (175°C).
  • - Preheat a large skillet over medium heat. Cook bacon and onion until sizzling, approximately 5 minutes. Add beef, season with salt and pepper, and cook until crumbly and no longer pink, around 5 minutes. Sprinkle garlic salt and onion powder, then continue cooking until beef is browned, about 5 minutes more. Drain excess grease.
  • Spread the beef mixture evenly in a 9-inch pie plate and generously top with 3/4 cup of sharp Cheddar cheese.
  • Combine eggs, mayonnaise, and heavy cream until smooth. Pour evenly over the Cheddar cheese and beef in the pie plate.
  • Bake in the preheated oven for 45 minutes until set, then sprinkle the remaining 1/4 cup of Cheddar cheese on top. Bake for an additional 10 minutes until cheese is melted.
