Indulge in a hassle-free Cuban-inspired slow cooker chicken with black beans and rice for a stress-free and savory meal.
Ingredients:
  • 1 large onion, chopped
  • 3 skinless, boneless chicken breast halves, or more to taste
  • 1 (14.5 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can petite diced tomatoes
  • 2 cups chicken broth
  • 1 cup sour orange juice
  • 0.75 cup dry white wine
  • 2 cloves garlic, pressed, or more to taste
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon ground thyme
  • 0.66666668653488 cup medium-grain white rice
Instructions:
  • Spread a layer of half of the chopped onion on the bottom of a slow cooker. Arrange the chicken breasts on top and evenly distribute the remaining onion on top of the chicken. Add the black beans and diced tomatoes.
  • Combine broth, orange juice, wine, garlic, cumin, oregano, salt, pepper, and thyme in a bowl, then transfer the flavorful mixture into the slow cooker.
  • Cook the chicken until tender and fully cooked, set on Low for 6-8 hours or High for 3-4 hours. Ensure it reaches an internal temperature of at least 165°F (74°C) when checked with an instant-read thermometer.
  • While you wait, bring water and rice to a gentle boil in a saucepan. Cover, reduce heat to medium-low, and simmer for 20 to 25 minutes until the rice is tender and the water is absorbed.
  • Shred the chicken and let it simmer in the pot for 5 to 10 minutes to absorb the flavors. Serve over rice.
