Cucumber Margaritas for a Crowd

Large batch cucumber margaritas, ideal for summer parties.
Ingredients:
  • 1.5 cups water
  • 1.5 cups white sugar
  • 4 large cucumbers, divided
  • 1 (750 milliliter) bottle silver tequila (such as Jose Cuervo®), chilled
  • 16 fluid ounces key lime juice (such as Nellie and Joe's), chilled
  • 1 lime wedge
  • margarita salt
  • crushed ice
Instructions:
  • In a saucepan over medium heat, stir together water and sugar until sugar dissolves completely, about 5 to 7 minutes. Remove from heat and transfer to a container. Quickly chill the simple syrup in the freezer for about 15 minutes.
  • Peel and juice 3 cucumbers. Strain the juice to remove pulp. Mix with tequila, lime juice, and simple syrup in a pitcher. Chill for at least 1 hour before serving.
  • Slice the remaining cucumber for garnish. Moisten glass rims with a lime wedge. Dip glasses in salt on a plate. Add 3/4 cup ice to a cocktail shaker. Stir cucumber mixture, pour some into the shaker, and shake for 10 seconds. Pour into glasses. Repeat with remaining mixture. Garnish glasses with cucumber slices.
