Frozen Cucumber Margaritas

Make a refreshing cucumber margarita blend for that frozen pool-side vibe. Whip up a pitcher now!
Ingredients:
  • For the margaritas
  • 1 heaping cup cucumbers, preferably 2-3 Persian or 1 seedless English cucumber, sliced
  • 8 ounces tequila blanco
  • 3 ounces agave syrup
  • 2 ounces orange liqueur
  • 4 ounces lime juice (from about 4 limes), freshly squeezed
  • 3 cups ice
  • To garnish
  • Tajín or kosher salt, to rim glasses
  • Cucumber spears and lime wheels
Instructions:
  • Chill sliced cucumbers overnight on a parchment-lined cookie sheet before making the margaritas.
  • Prepare cocktail base: Mix together tequila blanco, agave, orange liqueur, and lime juice in a gallon-sized zip top bag or freezer-safe container. Freeze overnight or for at least 4 hours before enjoying.
  • To make the margaritas, blend the chilled liquid ingredients (they should be slushy), frozen cucumber slices, and 3 cups of ice in a blender until smooth. Add more ice for a thicker drink if desired.
  • Prepare the cocktail glasses: Wet the outside edge of each glass with a lime wheel. In a shallow bowl, place Tajín or kosher salt. Press the glass at a slight angle into the salt, moving it around until the rim is coated to your liking. Repeat for any additional glasses.
  • Pour the refreshing blended cucumber margaritas into glasses and beautifully garnish them with a cucumber spear and lime wheel before serving.
