Indulge in this irresistible light and airy mousse for a refreshing treat.
Ingredients:
  • 1 envelope unflavored gelatin
  • 1/4 cup white wine or apple juice
  • 2 1/2 cups finely chopped seeded peeled cucumbers (2 1/2 medium)
  • 1/2 cup fat-free buttermilk
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup lime juice
  • 1/3 cup chopped green onions (5 medium)
  • 1/4 cup cholesterol-free reduced-calorie mayonnaise or salad dressing
  • 1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill weed
  • 1/4 teaspoon white pepper
Instructions:
  • Prepare your 4-cup mold or bowl by spraying it with cooking spray. Next, sprinkle the gelatin over the wine in a 1-quart saucepan to soften. Heat the mixture over medium heat for about 2 minutes, stirring constantly, until the gelatin is completely dissolved.
  • Combine 2 cups of cucumbers and the remaining ingredients in a blender or food processor. Blend on high speed until smooth. Add the gelatin mixture and blend for an additional 5 seconds.
  • Transfer the mixture into a mold and gently fold in the rest of the cucumber. Cover the mold and let it chill in the refrigerator for about 4 hours until set; then, carefully unmold the dish.
