Tangy mango and cucumber salad with a zesty rice vinegar dressing.
Ingredients:
  • 1 pound cucumbers, ends trimmed
  • 1.5 pounds mangos - peeled, pitted, and cut into 1-inch cubes
  • 0.5 teaspoon rice vinegar
  • 2 teaspoons sesame seeds
  • 1 teaspoon agave nectar
Instructions:
  • Peel the cucumber in wide alternating strips lengthwise, leaving some peel on. Slice into 1/4-inch pieces and add to the salad bowl.
  • Combine the mangos, rice vinegar, sesame seeds, and agave nectar in a bowl and mix well.
