Make a flavorful vegan burger using chickpeas, corn, and black beans - perfect for the whole family.
Ingredients:
  • Mixed salad leaves, to serve
  • 400g can chickpeas, rinsed, drained
  • 420g can corn kernels, rinsed, drained
  • 425g can black beans, rinsed, drained
  • 10.00 gm curry powder
  • 1 garlic clove, crushed
  • Olive oil spray
  • 4 wholemeal bread rolls, split, toasted
  • 40.00 gm mango chutney
  • 95g yoghurt
  • 40g baby spinach leaves
  • 1/2 continental cucumber, cut into ribbons
  • 1/2 small red onion, thinly sliced
Instructions:
  • Lay the chickpeas, corn, and black beans on a paper towel-lined plate. Top with another paper towel and gently press to dry.
  • Combine chickpea mixture, curry powder, and garlic in a food processor. Blend until almost smooth. Season to taste. Shape into 4 patties and refrigerate for 1 hour to chill.
  • Preheat a barbecue flat plate or chargrill on high heat. Spray the patties with oil and grill for 3 minutes on each side, or until they are nicely browned and cooked through.
  • Assemble by placing the roll bases on serving plates, then layering with spinach, patties, cucumber, a mixture of mango chutney and yoghurt, onions, and roll tops. Serve alongside salad leaves for a delicious meal.
