Try delicious curried lentil burgers on wholemeal buns with fresh tomatoes, snow pea shoots, and creamy yogurt for a crowd-pleasing dinner!
Ingredients:
  • 130g yoghurt
  • 60ml lemon juice
  • 48.00 gm tahini*
  • 250.00 ml cold mashed potato
  • 400g canned brown lentils, rinsed, drained
  • 28.00 gm mild Indian curry paste
  • 4 spring onions thinly sliced
  • 125.00 ml dry breadcrumbs
  • 18.40 gm vegetable oil
  • 4 wholemeal buns
  • 4 slices tomato
  • Snow pea shoots, to garnish
Instructions:
  • In a small bowl, combine the yogurt, lemon juice, and tahini. Season with salt and freshly ground pepper, then set aside.
  • Combine the mashed potato, lentils, curry paste, spring onion, egg, and breadcrumbs in a large bowl. Season with salt and pepper, then mix everything together using your hands.
  • Shape the mixture into 4 patties, using breadcrumbs as needed.
  • In a large frypan over medium heat, sizzle the patties in oil for 2-3 minutes on each side until they turn golden and are heated through.
  • Assemble by topping wholemeal buns with tomato slices, snow pea shoots, and yogurt dressing.
