Hearty lentil burgers for vegetarian delight.
Ingredients:
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 2.50 gm ground cumin
  • 400g can lentils, drained, rinsed
  • 1 carrot, peeled, grated
  • 1 egg, lightly beaten
  • 62.50 ml dried breadcrumbs
  • 1 loaf turkish bread, cut into 4, halved, toasted
  • Prepared hommus, to serve
  • Beetroot, slices, to serve
  • Mixed lettuce, to serve
Instructions:
  • In a large frying pan, heat half of the oil over high heat. Saute the onion for 4-5 minutes until tender. Add the cumin and cook for 1 minute, stirring occasionally until fragrant. Allow it to cool before using.
  • Start by placing the lentils in a food processor and blend until nearly smooth, then transfer the mixture to a bowl. Mix in the carrot, egg, and breadcrumbs, and season to your liking.
  • Form the mixture into 4 equally-sized patties, then let them chill covered in the refrigerator for 20 minutes until they are firm.
  • Heat the remaining oil in the same pan over medium heat and fry the patties for 2-3 minutes on each side until they are golden brown. Then, drain them on a paper towel.
  • On one side of each bread slice, generously spread a layer of creamy hummus. Layer with vibrant beetroot slices, fresh lettuce, a savory patty, and the reserved caramelized onion. Finish it off by topping with the remaining slice of bread for a mouth-watering sandwich experience.
