Lentil patties pan-fried to create a delicious vegetarian burger alternative to butter beans.
Ingredients:
  • 2.5 cups cooked lentils
  • 1 small onion, diced
  • 1 egg, beaten
  • 0.25 cup diced bell pepper
  • 0.125 cup Italian-seasoned bread crumbs
  • 0.33333334326744 cup shredded mozzarella cheese
  • 1 teaspoon olive oil-packed minced garlic
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 0.25 cup cornmeal, or as needed
Instructions:
  • Grind lentils in a food processor until coarsely textured, then transfer to a large mixing bowl.
  • Combine onion, egg, bell pepper, and bread crumbs with the lentils. Then, incorporate mozzarella cheese, garlic, salt, and pepper into the mixture and stir until well combined.
  • Shape the mixture into four evenly sized balls, then gently press them down to form patties.
  • Pour a generous amount of cornmeal into a wide, shallow bowl. Gently coat each patty in the cornmeal until fully covered.
  • In a wide skillet over medium-high heat, heat olive oil until shimmering. Cook patties until beautifully browned, approximately 5 minutes per side.
