Curried Chicken Soup with Chickpeas and Cauliflower

Make quick and flavorful chicken soup base for two delicious varieties in less time than traditional homemade soup.
Ingredients:
  • 1 recipe Fast Chicken Soup Base
  • 2 (16 ounce) cans chickpeas, drained
  • 2 cups bite-size cauliflower florets
  • 2 tablespoons curry powder
  • 1 (13.5 ounce) can coconut milk (optional, but very good)
  • 0.5 cup chopped fresh cilantro
  • Salt and freshly ground black pepper
  • grated Parmesan cheese
Instructions:
  • Create a Quick Chicken Soup Base by bringing it to a gentle simmer.
  • Simmer drained chickpeas, cauliflower florets, curry powder, and coconut milk (optional but delicious) for 10-20 minutes until tender.
  • Finish off the dish by stirring in a generous 1/2 cup of fresh chopped cilantro just before taking it off the heat.
  • Season with salt, pepper, and grated Parmesan cheese to enhance flavors before serving.
