Whip up quick and tasty curried chicken soup with tomatoes, chickpeas, and spinach. Pair with warm pita bread for a satisfying meal.
Ingredients:
  • 1 tablespoon olive oil
  • 4 skinless, boneless chicken breasts, cubed into bite-sized pieces
  • 1 tablespoon mild curry paste
  • 2 (14.5 ounce) cans chopped tomatoes
  • 0.5 chicken stock cube
  • 6 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 2 (15 ounce) cans chickpeas
Instructions:
  • In a large pot over medium heat, heat oil. Brown chicken for 6 to 7 minutes. Stir in curry paste. Add tomatoes and mix well. Pour water from two empty tomato cans into the pot. Crumble in stock cube and simmer soup for 10 minutes.
  • Simmer the spinach in the pot until defrosted, stirring occasionally to incorporate into the soup. Then, add the chickpeas and cook until heated through.
