Freeze these delicious Maltese curry pea pastries for effortless entertaining.
Ingredients:
  • 175g dried green split peas
  • 1 small brown onion, finely chopped
  • 7.50 gm mild curry powder
  • 4 sheets frozen puff pastry, partially thawed
Instructions:
  • In a saucepan, add peas and cover with cold water. Bring to a boil over high heat, then reduce to medium heat and simmer uncovered for 30 minutes or until peas are tender. Drain before serving.
  • In a large frying pan over high heat, heat oil. Cook onion and garlic for 5 minutes until softened. Stir in curry powder and cook for 30 seconds until fragrant. Add peas and 1/4 cup cold water. Cook for 5 minutes until liquid evaporates. Let it cool completely.
  • Preheat the oven to 220°C/200°C fan-forced and line 2 baking trays with baking paper.
  • Cut 5 rounds from each pastry sheet using a 10cm round cutter. Brush the edges of the rounds with egg. Spoon 1 level tablespoon of the mixture onto the center of each round and spread to form a 5cm log. Fold up two sides of the pastry to enclose the log, then pinch to seal. Twist the ends to form points and place them on prepared trays. Brush the pastries with the remaining egg.
  • Bake until puffed and golden brown, about 20-25 minutes. Allow to rest for 4 minutes before serving.
