Curried split pea soup: Easy, flavorful meal with olive oil. Perfect for lunch or dinner.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 small onion, chopped
  • 1 teaspoon curry powder
  • 1 cup yellow split peas
  • 4 cups water
  • 1 teaspoon salt
Instructions:
  • In a large saucepan, heat olive oil, then sauté carrot, onion, celery, and curry for 5 minutes. Stir in water, peas, and salt. Simmer for 45-50 minutes, stirring occasionally, until very thick.
