Vegan split pea soup with barley, veggies, and herbs for a wholesome plant-based meal.
Ingredients:
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 7.5 cups water
  • 2 cups dried split peas
  • 0.5 cup barley
  • 1.5 teaspoons salt
  • 3 potatoes, diced
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 0.5 cup chopped parsley
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried thyme
Instructions:
  • Collect all ingredients needed for the recipe.
  • In a large pot, heat oil over medium-high heat. Sauté onion, garlic, and bay leaf until onions are translucent, about 5 minutes. Add water, peas, barley, and salt. Bring to a boil, then reduce heat to low and simmer uncovered for 2 hours, stirring occasionally.
  • Add a medley of potatoes, carrots, celery, parsley, basil, thyme, and pepper to the pot. Allow the ingredients to simmer together until the peas and vegetables reach a perfect tender texture, approximately 1 hour.
