Split pea & coriander spread

Enhance your party platter with a vibrant green dip, perfect with spicy chili flatbreads.
Ingredients:
  • 200g split peas
  • 1 small white onion, finely chopped
  • 1 garlic clove, thinly sliced
  • 1 tsp ground coriander
  • 250.00 ml coriander leaves
  • Fresh vegetables, to serve
Instructions:
  • In a large pan, combine peas, 1 tablespoon lemon juice, 1/2 teaspoon salt, and 1.5 liters (6 cups) cold water. Bring to a boil, then simmer on medium-low for 25-30 minutes until peas are tender. Drain and rinse with cold water.
  • Combine peas and remaining lemon juice in a food processor, pulsing until a coarse paste forms. Leave the lid off and allow it to cool for 10 minutes.
  • Heat oil in a frypan over medium-low heat. Sauté onion and garlic until soft, about 5 minutes. Stir in ground coriander and cook for another minute. Allow to cool for 5 minutes. Combine the onion mixture and coriander leaves with peas in a food processor. Season with sea salt and freshly ground black pepper to taste. If the mixture is too thick, add 1-2 tablespoons boiling water. Serve with flatbreads and vegetables.
