Delicious gluten-free pancakes made with sweet rice flour, soy yogurt, soy milk, and eggs. Find sweet rice flour at a natural foods store.
Ingredients:
  • 1 cup sweet rice flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 1.25 cups soy yogurt
  • 0.25 cup rice milk
  • 2 tablespoons vegetable oil
Instructions:
  • Combine all the dry ingredients in a bowl and whisk the eggs, soy yogurt, rice milk, and oil in another bowl. Pour the wet ingredients into the dry mixture and stir briefly to combine.
  • Preheat a lightly oiled griddle or frying pan over medium-high heat. Pour 1/4 cup of batter for each pancake onto the hot surface. Cook until bubbles form on top, then flip and continue cooking until both sides are golden brown, about 1 to 2 minutes each side.
