Create tasty dairy-free almond butter cookies with shortening and vegan butter spread.
Ingredients:
  • 0.5 cup almond butter
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 0.25 cup shortening
  • 0.25 cup vegan margarine (such as Earth Balance®)
  • 1 egg
  • 1.25 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon baking powder
Instructions:
  • Combine almond butter, white sugar, brown sugar, shortening, margarine, and egg in a large bowl until smooth. Gradually mix in flour, baking soda, and baking powder until dough forms.
  • Roll the dough into 1 1/4-inch balls and set them 3 inches apart on ungreased cookie sheets. Gently press down using a fork dipped in sugar to create a crisscross pattern on top of each cookie.
  • Bake in the preheated oven until a light golden brown, for 9 to 10 minutes. Allow to cool for 5 minutes, then transfer from the cookie sheets to a wire rack to cool completely.
