Elevated Danish cinnamon rolls with cardamom-spiced dough, topped with optional confectioners' sugar glaze.
Ingredients:
  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 3 (0.6 ounce) cakes cake yeast
  • 6.5 tablespoons butter, room temperature
  • 2 eggs
  • 0.5 teaspoon ground cardamom
  • 2 tablespoons white sugar
  • 0.25 teaspoon salt
  • 4 cups all-purpose flour, or as needed
  • 0.66666668653488 cup butter, softened
  • 0.5 cup white sugar
  • 2 tablespoons ground cinnamon
Instructions:
  • Combine warm milk and fresh cake yeast in a mixing bowl. Add 6 1/2 tablespoons of soft butter, eggs, cardamom, 2 tablespoons sugar, salt, and 3 1/2 cups of flour. Use a wooden spoon to mix until combined. If sticky, incorporate the remaining 1/2 cup of flour. Cover the bowl and allow the dough to rise for 30 minutes.
  • Combine the luxurious 2/3 cup of butter and 1/2 cup of sugar until creamy, then gently fold in the aromatic cinnamon.
  • Place the dough on a floured surface and knead until firm, approximately 3 minutes. Divide the dough in half and roll each half into a 1/2 inch thick rectangle. Spread both rectangles with the filling evenly.
  • Place the filling-covered dough rectangle on top of the other dough rectangle. Roll up the dough tightly, beginning with the edge nearest to you, to create a long log. Slice the log into 1-inch thick pieces.
  • Preheat the oven to 425 degrees F (220 degrees C) and prepare a baking sheet with parchment paper or grease a baking dish or two cake pans.
  • Arrange the rolls on the baking sheet, spacing them 3 inches apart. For pull-apart rolls, place them in a greased baking dish, spacing them 1 inch apart. Place the uneven end pieces on the baking sheet cut-side up. Allow the rolls to rest for 20 minutes before baking.
  • Bake the snails in the preheated oven until golden brown for about 10 minutes. For the pull-apart rolls, bake at the same temperature for 10 minutes, then reduce the heat to 350 degrees F (175 degrees C) and continue baking until the sides are fully set, for another 10 minutes. If the rolls start browning too quickly, cover the baking dish with foil.
