Dark chocolate and rum truffles

Indulgent Christmas truffles, perfect for gifting.
Ingredients:
  • 2 x 200g pkts good-quality dark chocolate, coarsely chopped
  • 125ml (1/2 cup) thickened cream
  • 40.00 ml rum
  • 1 x 375g pkt dark choc melts
  • 100g white chocolate melts
Instructions:
  • In a heatproof bowl, combine the chopped chocolate and cream. Set the bowl over a saucepan of simmering water, ensuring it doesn't touch the water. Stir with a metal spoon until the chocolate melts and the mixture is smooth. Mix in the rum. Chill in the fridge for 4 hours or until firm for rolling into balls.
  • Prepare a tray with non-stick baking paper. Shape 2 teaspoonfuls of chocolate mixture into balls and place them on the tray. Repeat with the rest of the mixture. Chill in the fridge for 1 hour or until firm.
  • Place dark chocolate melts in a heatproof bowl over a saucepan of simmering water, ensuring the bowl does not touch the water. Stir with a metal spoon until the chocolate is melted and smooth.
  • Prepare a tray lined with non-stick baking paper. Divide the truffles into 4 batches. Take one batch out of the fridge. Coat truffles, one by one, in melted chocolate using a fork or truffle dipper. Tap the fork or dipper lightly on the bowl to remove any excess chocolate. Place the coated truffles on the prepared tray. Repeat this process with the remaining 3 batches. Let them sit for 10 minutes to set.
  • Melt white chocolate in a heatproof bowl set over simmering water, ensuring it doesn’t touch the water. Stir until smooth, then drizzle over truffles using a fork. Let it set for 5 minutes.
