Ingredients:
  • 1 x 250g pkt Dark Chocolate, finely chopped
  • 125ml (1/2 cup) thickened cream
  • 1-40.00 ml rum or brandy
  • 150g dark chocolate melts, melted
  • 130g (2 cups) shredded coconut
Instructions:
  • Put the chopped chocolate in a glass or ceramic bowl. Heat the cream in a small saucepan on medium-high heat until just boiling, then pour it over the chocolate. Stir delicately until the chocolate melts and the mixture becomes smooth.
  • Combine the rum or brandy into the mixture. Cover and let it rest for 2-3 hours until it firms up.
  • Prepare a baking tray with non-stick baking paper. Form heaped teaspoonfuls of the chocolate mixture into balls and arrange on the tray. Chill in the fridge for 1 hour or until firm.
  • Follow the packet directions to melt the chocolate melts. Spread the coconut on a large plate. Dip each truffle into the melted chocolate, then roll it in the coconut until coated. Place on the lined tray and repeat with the remaining truffles. Let them sit until the chocolate sets.
