Malibu & coconut truffles

Malibu liqueur-infused truffles for a decadent treat!
Ingredients:
  • 60ml (1/4 cup) coconut cream
  • 360g white chocolate, chopped
  • 40.00 ml Malibu coconut liqueur
  • 65g (1 cup) shredded coconut
Instructions:
  • In a heatproof bowl, combine coconut cream, half of the chocolate, and Malibu. Place the bowl over a saucepan with simmering water, ensuring the bowl doesn't touch the water. Stir occasionally until the chocolate melts and the mixture is smooth. Remove from heat and chill in the fridge for 1 hour to set.
  • 1. Prepare a tray lined with baking paper. 2. Scoop out 1 1/2 teaspoonfuls of chocolate mixture onto the tray using a teaspoon. 3. Freeze the chocolate balls for 30 minutes to set. 4. Roll the chilled mixture into balls using your hands. 5. Place the formed balls back on the tray and return to the freezer for an additional 30 minutes to firm up.
  • While you wait, melt the rest of the chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat.
  • Prepare a tray with baking paper. Spread coconut on a plate. Dip truffles in chocolate using 2 forks, shaking off excess by tapping the fork. Coat with coconut and place on the tray. Repeat with the remaining truffles, chocolate, and coconut.
