Coconut Truffles

Create delicious no-bake holiday treats with chocolate chips, condensed milk, coconut extract, and shredded coconut.
Ingredients:
  • 3 cups semisweet chocolate chips (18 oz)
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 2 teaspoons coconut extract
  • 1 cup sweetened shredded coconut
Instructions:
  • Heat chocolate chips and condensed milk in a 2-quart saucepan over low heat until condensed milk starts to bubble at edges, for approximately 7 minutes. Remove from heat and stir until smooth. Add coconut extract, pour into a bowl, cover, and refrigerate for about 1 hour until set.
  • Take some coconut and place it in a small bowl. Form 1 tablespoon of the chilled truffle mixture into a ball. Roll the ball in the coconut until it's nicely coated, then place it on a plate or cookie sheet. Repeat with the rest of the mixture, remembering to wash your hands if the chocolate begins to stick.
  • If you prefer, place in elegant paper candy cups, cover, refrigerate briefly, then serve beautifully at room temperature.
