Irresistible boozy rum balls with dark rum-infused chocolate and vanilla wafers, a must-have for any holiday party.
Ingredients:
  • 1 (12 ounce) box vanilla wafer cookies (such as Nilla®)
  • 1 cup semisweet chocolate chips
  • 0.25 cup light corn syrup
  • 0.75 cup dark rum (such as Meyer's®)
  • 1 cup confectioners' sugar, plus more for dusting
Instructions:
  • Pulse vanilla cookies in a food processor until finely crumbled.
  • In a saucepan over low heat, melt chocolate chips with corn syrup. Stir frequently until chocolate is smooth, about 5 minutes. Remove from heat, then mix in rum and confectioners' sugar until smooth. Gently fold in cookie crumbs; dough will be sticky.
  • Chill the saucepan in the refrigerator until the dough is firm and ready to roll, approximately 15 minutes. Line 2 plates with waxed paper and sprinkle with confectioners' sugar.
  • Shape dough into 1-inch balls and arrange on prepared plates. Sprinkle rum balls with confectioners' sugar. Chill until firm, approximately 30 minutes.
  • Take the rum balls out of the refrigerator and place them in a resealable bag along with the additional confectioners' sugar. Seal the bag and shake well to ensure the rum balls are fully coated with confectioners' sugar.
