Decadent dark chocolate Bundt cake with hints of vanilla and coffee for a rich and moist treat loved by all.
Ingredients:
  • cooking spray
  • 1 cup unsalted butter
  • 1 cup brewed coffee
  • 1 cup high-quality unsweetened cocoa powder
  • 1.5 teaspoons vanilla extract
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 0.75 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 cup mayonnaise
  • 0.25 cup buttermilk
  • 1 tablespoon powdered sugar, or as needed
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously coat a fluted tube pan, like a Bundt pan, with cooking spray.
  • In a saucepan over medium heat, melt butter with coffee and cocoa for about 10 minutes. Add vanilla extract, then let it cool for another 10 minutes before using.
  • Combine sugar, flour, baking powder, baking soda, and salt in a bowl. Stir in the cooled chocolate mixture until well combined.
  • In a large bowl, combine mayonnaise, buttermilk, and eggs. Use an electric mixer on high speed to beat for about 2 minutes until well combined. Then mix in the chocolate mixture on medium-high speed for 3 to 4 minutes, scraping the bowl occasionally. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 45 to 50 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes in the pan, then invert the cake onto a serving plate and cool completely for about 30 more minutes. Dust the top with powdered sugar.
