Decadent mini cheesecakes with luxurious chocolate ganache and fresh strawberries - simple yet stunning.
Ingredients:
  • 0.5 (13.5 ounce) package graham crackers
  • 4 tablespoons butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 cup confectioners' sugar
  • 1 cup sour cream
  • 0.5 cup heavy cream
  • 0.66666668653488 cup chocolate chips
  • 18 strawberries
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C), then line 18 muffin cups with paper liners.
  • Crush graham crackers into fine crumbs in a resealable plastic bag using a rolling pin. Transfer to a bowl, then mix in butter and brown sugar until it resembles wet sand. Press 1 tablespoon of the mixture into the bottom of each paper liner to form the crusts.
  • Place in the preheated oven until the edges are lightly golden, for about 8 to 10 minutes. Then, take out and allow to cool.
  • Blend cream cheese and confectioners' sugar until smooth. Mix in eggs one at a time, followed by sour cream and vanilla extract. Distribute the mixture evenly over the 18 crusts.
  • Bake in the preheated oven until the tops appear dry and the centers have a slight jiggle, around 15 minutes. Then, refrigerate until firm, for at least 2 hours up to overnight.
  • Microwave cream until just simmering, around 1 minute. Stir in chocolate chips and wait until softened for about 1 minute. Whisk till chocolate melts and ganache is glossy.
  • Drizzle decadent chocolate ganache over each cheesecake, garnish with a luscious whole strawberry on top.
