Deep-fried Taleggio with tomato salad

Irresistible gourmet vegetarian starter: Crunchy deep-fried cheese.
Ingredients:
  • 300g Taleggio* cheese, sliced into 8 wedges
  • 4 vine-ripened tomatoes, finely sliced
  • 1 small onion, finely sliced
  • 20.00 ml baby basil leaves, or larger basil leaves, torn
  • 60ml olive oil
  • 40.00 ml balsamic vinegar
  • 20.00 ml flour
  • 2 eggs, beaten
  • 375.00 ml dried breadcrumbs
  • Light olive oil, to fry
Instructions:
  • Chill the Taleggio slices in the freezer for 15 minutes to enhance their texture.
  • On 4 serving plates, evenly distribute the tomato slices, layer with onion, and sprinkle with fresh basil leaves. In a small bowl, whisk together the 1/4 cup of oil, vinegar, salt, and pepper. Keep the dressing aside.
  • Take the cheese out of the freezer and coat it in flour, egg, and breadcrumbs. Chill in the fridge. Meanwhile, heat oil in a deep saucepan until it reaches 180°C (or until a bread cube turns golden in 10 seconds). Deep-fry the cheese for 2-3 minutes until golden brown, flipping as needed.
  • Drizzle the salad with dressing and top with two cheese wedges. Serve promptly.
