Grill juicy skirt steak marinated in zesty spices and citrus for the best carne asada.
Ingredients:
  • 5 pounds beef skirt steak, thinly sliced
  • 1 cup water
  • 1 orange, sliced
  • 0.66666668653488 cup orange juice
  • 0.66666668653488 cup lime juice
  • 0.5 cup red wine vinegar
  • 1 lime, sliced
  • 1 bunch fresh cilantro leaves, chopped
  • 0.25 cup vegetable oil
  • 1 tablespoon salt
  • 3 cloves garlic, minced
  • 1 tablespoon ground white pepper
  • 1 tablespoon ground black pepper
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 0.25 teaspoon ground cloves
Instructions:
  • Place the beef in a spacious resealable plastic bag.
  • In a large bowl, mix together water, orange slices, orange juice, lime juice, vinegar, lime slices, cilantro, oil, salt, garlic, white pepper, black pepper, oregano, cumin, chili powder, and cloves. Whisk until well combined. Pour the marinade over the beef in a sealed bag.
  • Place the beef in the refrigerator to marinate for at least 2 hours, preferably overnight.
  • Prepare the grill for cooking by heating it to medium heat and lightly oiling the grate.
  • Grill the beef on the preheated grill over direct heat for 2 to 3 minutes per side, until firm and slightly pink in the center. Ensure the internal temperature reaches 140 degrees F (60 degrees C) for a perfect medium doneness.
