Savory chicken casserole with a medley of mushrooms in a rich creamy sauce - a sure hit with guests!
Ingredients:
  • 3 tablespoons vegetable oil
  • 1.5 pounds boneless chicken breast, cut into strips
  • 8 ounces cremini mushrooms, sliced
  • 5 ounces oyster mushrooms, stemmed and sliced
  • 4 ounces shiitake mushrooms, stemmed and sliced
  • 1 clove garlic, finely chopped
  • 0.5 cup white wine
  • 2 cups chicken stock
  • 0.5 teaspoon ground sage
  • 0.25 cup heavy whipping cream
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect cooking environment.
  • In a spacious skillet, heat oil over medium heat. Brown chicken strips by cooking and stirring for 1 to 2 minutes on each side. Place the cooked chicken in a casserole baking dish.
  • In a skillet, cook a variety of mushrooms and garlic until tender for about 5 minutes. Stir in flour until well mixed. Slowly pour in white wine. Add chicken stock, sage, salt, and black pepper, and simmer until the sauce thickens for about 5 minutes. Remove from heat and mix in heavy cream.
  • Cover the chicken in the casserole dish with the sauce, gently stirring to mix. Then, cover with aluminum foil.
  • Cook until golden and bubbling, approximately 30 minutes. Top with fresh parsley right before serving.
