One-pot French-style chicken casserole

Try this irresistible chicken and mushroom casserole for an easy and delicious meal.
Ingredients:
  • 27.30 gm olive oil
  • 1kg Chicken Thighs, halved crossways
  • 1 carrot, peeled, coarsely chopped
  • 2 celery sticks, coarsely chopped
  • 100g bacon, chopped
  • 1 leek, thinly sliced
  • 200g cup mushrooms, quartered
  • 1 garlic clove, crushed
  • 1 tsp dried tarragon
  • 40.00 ml plain flour
  • 125ml white wine
  • 500ml chicken stock
  • 125ml thickened cream
  • 40.00 ml parsley, finely chopped
  • Steamed green beans, to serve
  • Crusty bread, to serve
  • Extra virgin olive oil, for dipping
Instructions:
  • In a large heavy-based saucepan over medium heat, heat 2 teaspoons of flavorful olive oil. Season the chicken generously. Cook the chicken in batches for about 5 minutes until beautifully browned all over, then transfer to a plate.
  • In a hot pan, sauté carrot and celery in the remaining tablespoon of olive oil for 5 minutes. Add bacon, leek, and mushrooms and cook for another 5 minutes until bacon and mushrooms are golden brown. Stir in garlic and tarragon, cook for 1 minute until fragrant.
  • Sprinkle flour into the pan and cook, stirring, for 2 minutes. Slowly pour in wine and stock, stirring to mix. Add the chicken back to the pan and bring to a boil. Lower the heat and simmer for 20 minutes until chicken is cooked. Mix in cream and parsley and cook for 2-3 minutes. Season to taste.
  • Enjoy with a side of beans, crusty bread, and drizzle with extra virgin olive oil.
