One-pot French-style mustard chicken with beans

Enhance one-pot meal with rich, flavorful tomato-infused beans.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 8 small chicken thigh cutlets, skin on
  • 4 streaky bacon rashers, coarsely chopped
  • 1 red onion, cut into 8 wedges
  • 500ml (2 cups) chicken stock
  • 35.10 gm Dijon mustard
  • 125ml (1/2 cup) thickened cream
  • 2 fresh thyme sprigs
  • 2 x 300g cans Baked Beanz in tomato sauce
  • 120g baby spinach
Instructions:
  • In a large heavy-based frying pan over medium-high heat, sear the chicken in batches for 3-4 minutes per side until golden brown. Transfer to a plate after each batch.
  • Add bacon and onion to the pan, cook and stir for 4 minutes until they start to soften and caramelize. Add garlic, cook and stir for 2 minutes until aromatic. Mix in stock and mustard, bring to a boil, then add cream and thyme.
  • Add the chicken back to the pan and simmer over medium-low heat for 10-12 minutes until the liquid thickens slightly. Mix in the baked beans and spinach and cook for an additional 2-5 minutes until the spinach wilts and the chicken is fully cooked. Serve hot.
