French-style one-pot chicken feast for the family.
Ingredients:
  • 185.63 gm dry red wine
  • 4 garlic cloves, thinly sliced
  • 20.00 ml balsamic vinegar
  • 20.00 ml fresh thyme leaves
  • 600g red-skinned potatoes, roughly chopped
  • 1 large red onion, cut into wedges
  • 200g button mushrooms
  • 9 rashers streaky bacon, rind removed, halved crossways
  • 6 skinless chicken thigh cutlets
  • 300g green beans, steamed
  • Chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • Preheat oven to 220C (200C fan-forced).
  • In a baking dish, mix together wine, 1/2 cup water, garlic, vinegar, and half of the thyme. Add in potato, onion, and mushrooms. Season generously with salt and pepper. Bake in the oven for 20 minutes.
  • Next, lay 3 slices of bacon slightly overlapping on each chicken breast.
  • Arrange the chicken on top of the bed of seasoned vegetables before returning it to the oven for an additional 40 minutes, or until the chicken is golden brown and fully cooked.
  • Garnish the coq au vin with fresh green beans and a sprinkle of parsley and the remaining thyme.
