Fluffy, gluten-free pancakes that taste just like the real deal!
Ingredients:
  • 1 cup rice flour
  • 3 tablespoons tapioca flour
  • 0.33333334326744 cup potato starch
  • 4 tablespoons dry buttermilk powder
  • 1 packet sugar substitute
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon xanthan gum
  • 3 tablespoons canola oil
Instructions:
  • Combine rice flour, tapioca flour, potato starch, dry buttermilk powder, sugar substitute, baking powder, baking soda, salt, and xanthan gum in a bowl. Add eggs, water, and oil. Mix until smooth with minimal lumps.
  • Preheat a generously oiled skillet or griddle over medium-high heat. Scoop batter onto the skillet and cook until bubbles appear. Flip and cook until golden brown underneath. Serve promptly with your favorite condiments.
