Easy oatmeal cookie bars with raspberry jam filling between buttery brown sugar-oat crusts for a sweet treat.
Ingredients:
  • 1 cup rolled oats
  • 0.5 cup packed light brown sugar
  • 0.125 teaspoon salt
  • 0.5 cup butter, softened
  • 0.75 cup seedless raspberry jam
Instructions:
  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch square pan and line it with foil that has been greased as well.
  • In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Use your hands or a pastry blender to incorporate the butter until a crumbly mixture forms.
  • Evenly press 2 cups of oat mixture into the bottom of the pan. Spread jam, leaving a 1/4 inch border. Sprinkle the remaining crumb mixture on top and gently press into the jam.
  • Place in the oven that has been heated until lightly browned for 35 to 40 minutes. Let cool before slicing into bars.
