Detroit-Style Pizza

Chef John's Detroit-style pizza: Cheesy, crunchy crust with fried cheese.
Ingredients:
  • 1 cup warm water
  • 1 (.25 ounce) package active dry yeast
  • 2.5 cups bread flour
  • 3 teaspoons olive oil, divided
  • 1 teaspoon kosher salt
  • 1 (24 ounce) jar marinara sauce
  • 2 teaspoons dried oregano
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 8 ounces Monterey Jack cheese
  • 4 ounces mild Cheddar cheese
  • 1 (8 ounce) package thick pepperoni slices
Instructions:
  • Prepare all of your ingredients.
  • In the bowl of a stand mixer, combine warm water, yeast, and sugar, allowing them to dissolve together.
  • Combine 2 teaspoons of olive oil, salt, and bread flour in a mixing bowl. Use a dough hook attachment to knead the mixture until the dough is smooth, soft, and elastic.
  • Spread the remaining 1 teaspoon of oil on a 10x14-inch Detroit-style pizza pan using your fingers. Place the dough in the center of the pan, then use oiled fingers to pull and stretch the dough into a rectangular shape.
  • Allow the dough to double in size by covering it, approximately 1 hour.
  • Prepare the sauce by simmering marinara sauce, oregano, red pepper flakes, and garlic powder in a saucepan over medium-low heat for 15 minutes.
  • Preheat the oven to 525°F (274°C). Combine Monterey Jack and Cheddar cheese in a bowl and gently toss to mix evenly.
  • Coat fingertips with aromatic olive oil from the pan, then gently deflate dough by stretching and pressing it into a rectangle that reaches the edges of the pan. Mold the dough up the sides by about 1/2 inch for a beautiful finish.
  • Arrange most of the pepperoni slices on the dough, then evenly sprinkle cheese over the top, ensuring full coverage, especially along the edges where the dough meets the pan.
  • Drizzle sauce in three elegant lines on top. Place the rest of the pepperoni slices evenly over the sauce.
  • Bake in the oven until the pizza is slightly darker than golden brown, around 15 minutes. Allow to cool for 5 minutes before serving.
  • Gently transfer the pizza onto a cutting board and cut into rectangles.
  • Serve while hot and savor every bite!
